Potato Gratin

Makes 2 portions.


  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 1/8 teaspoon pepper
  • 1 1/3 cups milk
  • 1/2 cup shredded white cheddar or swiss cheese
  • 3 cups thinly sliced peeled potatoes (about 6 medium)


  • Preheat oven to 350F. In a medium saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat; stir in cheese until melted. Add potatoes and onion.
  • Transfer to a greased 9×9 dish. Cover with foil and bake 30 minutes. Uncover and bake another 15 minutes, until golden on top and bubbly.
