Radish & Cucumber Salad

Makes 6 servings.

Ingredients

  • Juice and zest of 1 lemon
  • 1/3 cup olive oil
  • Salt and pepper to taste
  • 1 tbsp Dijon mustard
  • 1 cucumber, thinly sliced
  • 1 bunch radishes, thinly sliced
  • 1 tbsp chopped fresh dill
  • ¼ cup chopped fresh parsley

Directions

  • In a large bowl, whisk together lemon, oil and Dijon.
  • Add cucumbers, radishes and dill and toss to combine.
  • Season to taste with salt and pepper.
