Copper Bottom Parkman Ave DIPA

Made in Montague, PEI, Copper Bottom Brewing is a craft brewery owned by husband and wife team Ashley Condon and Ken Spears, both of whom share a passion for craft beer and music.

Parkman Ave is their flagship Double IPA, it is a big, hop-forward beer. This double IPA is tropical, aromatic and smooth.

Double IPA’S are big beers, so pair accordingly. Fire up the grill, char some of your favourite meats and cover with thick barbecue sauce. Ribs, pork chops and even chicken all pair nicely when grilled. Strong cheeses like blue and sharp cheddar are also a good choice.

La Sablette Muscadet

With the opening of the lobster season quickly approaching La Sablette Muscadet is the perfect pairing. La Sablette is a white wine from the Loire Valley in France, produced in the Muscadet Sevre-et-Maine appellation with the Burgundy Melon grape. This wine is aged on the lees (labelled sur lie). Sur Lie ageing is the process of allowing a finished wine to continue to sit on the lees, in order to extract flavor. Lees are dead yeast cells, leftover from the fermentation process.

This wine is dry, pale yellow in color and has an intense bouquet dominated by aromas of lemon. La Sablette has dry fruitiness, with green fruit and lime flavors. Muscadet is loved as an excellent food pairing wine due to its minerality, citrus like taste and acidity.

Ungava Gin

Quebec-based Domaine Pinnacle produces Ungava, a gin made with botanicals harvested exclusively from the Ungava Peninsula, the province’s northernmost point. It is hard to miss as Ungava is sunshine yellow in color. Ungava, is made from a neutral spirit derived from corn and, most importantly botanicals gathered from the tundra region of northern Quebec. The arctic plants that make up Ungava’s botanical bill are Cloudberries, Crowberries, Labrador tea and Wild Rosehip.
