Serves: 4


  • 4 fresh tomatoes, diced
  • 1 red onion, finely diced
  • 1 jalapeño pepper, seeded and finely diced
  • 1 clove of garlic, finely diced
  • 2 limes, juiced
  • 2 tbsp. (30ml) extra virgin olive oil
  • ½ cup (120g) cilantro, finely chopped
  • Kosher salt and freshly cracked black pepper


  • Combine ingredients in a mixing bowl, season to taste with salt and pepper and let sit for at least an hour in the fridge before serving.
